This is another one of my "go to" recipes. I make this one a couple of times a month, I would say. I call it:
Mexican Dish
(Very creative, I know.)
-about 6 corn tortillas
-one small can of chopped olives (you could chop them yourself or use sliced)
-15 oz. can diced tomatoes
-15 oz can re fried beans
-1 package taco seasoning
-small can of diced green chillies
-shredded cheese (about 2-3 cups, NEVER be stingy on the cheese!)
and...
one pound of browned hamburger
After you drain the meat, add the tomatoes (undrained), olives, taco seasoning, and chillies.
Mix it all together, bring it to a boil and let it simmer for about 5 minutes.
Meanwhile, in a 13 X 9 dish place enough of the corn tortillas to cover the bottom. I rip them in quarters. Then put the re fried beans on top of the tortillas.
(They are easier to spread if you heat them up in the microwave first.)
(I usually layer enough to cover all the beans, but I was a little short on tortillas when I did this. Came out pretty much the same. Lesson learned: You can make this dish with only 4 tortillas.)
Then pour the meat mixture over the tortilla layer.
