Time for another dinner recipe from my house to yours. Once again, it's pretty quick and easy. I got the recipe from a "Taste of Home" magazine, but I have changed several things to fit my family's likes. So here is my version of...
Upside-down Pizza!
For the filling you will need 1 pound of hamburger, a 15 oz can of tomato sauce, about a cup of pepperoni slices cut into quarters, 1 small can of sliced olives, 1/2 of a green pepper diced, one medium onion diced and tons of mozzarella cheese.
Cook the onion and pepper in some olive oil until it is tender.
Push the onion/pepper mixture to the side of the pan and add the pepperoni. Cook it until it starts to get crispy on the edges.
Push the pepperoni aside and add the hamburger. Cook the meat until it is no longer pink.
While the meat cooks you can work on the topping. Mix 2 eggs, 1 cup of milk, 1 tablespoon of vegetable oil, 1/2 teaspoon of salt, some pepper and whisk together. To make the topping extra yummy you NEED to add some cheese to the mixture. Grated Parmesan makes it kind of crispy on top and mozzarella makes it thicker and gooey, so I add a little of both. About 1/4 cup of each.
Once the hamburger is browned, you can mix the green pepper/onion mix, the pepperoni and hamburger together. Then add the can of olives, drained.
Next mix 2 tablespoons of flour into the mixture and let it cook for 2 minutes, then mix in the can of tomato sauce. It will get thick and bubbly. Let it cook for a few minutes.
Take the completed mixture and place it into a non greased 13 X 9 pan.
Sprinkle 2 cups of shredded mozzarella on top of the meat mixture.
